Your first college job was at Arkansas State. Were you a good coach in the beginning? – I thought after playing high school and college football, and coaching at a small high school in Arkansas for four years, I thought I knew a lot of football. I didn’t know anything. I was amazed at the complexity of college football. High schools have closed that gap.
What was the best meal on the menu when you owned Tubby’s Catfish restaurant? – Tubby’s Pond Platter. It was two catfish filets, two fried chicken strips, two frog legs; and on the side you got Tubby’s Pond Water. It was a deal at $7 or $8.
What was in Tubby’s Pond Water? – A punch-like drink.
